Ingredients
  

  • 1-2 Tbsp oil olive or avocado
  • 1 onion, diced
  • 3 carrots, peeled and diced
  • 2-3 stalks celery, diced
  • 8 cups chicken broth 2 boxes
  • 1 can crushed tomatoes, 28 oz
  • 1 Tbsp balsamic vinegar
  • 1 Tbsp honey
  • 1 Tbsp fresh basil, chopped Or 1 tsp dried basil
  • 1 Tbsp fresh thyme, chopped Or 1 tsp dried thyme
  • 1 bag filled tortellini, 19 oz, fresh, frozen, or dried cheese-stuffed
  • 1 bag fresh spinach Or 1-2 cups frozen spinach

Instructions
 

  • In a large pot or dutch oven, heat oil over medium high heat. Add the diced onion, celery, and carrots and saute until tender.
  • Once the veggies are tender, add the chicken stock, tomatoes, vinegar, and honey. Bring to a simmer.
  • Once the soup is simmering, add the tortellini and herbs. Cooking time depends on whether the tortellini is fresh or frozen. Frozen tortellini will take longer to cook than fresh. Follow the cooking time on the package.
  • Once the tortellini is cooked through, add the spinach. Cook for a few more minutes and then remove from heat.
  • Taste and adjust seasonings. Add salt and pepper if needed.
