They’re so quick and easy to whip up that even a child could make them. All you need is a few bowls and a big spoon. You don’t need a mixer to make these bars. In fact, a mixer could make them tough and dense since you don’t need to beat the batter. Stirring by hand is all that is needed to whip these up.

This recipe fits a standard 8×8 baking dish. You could also try baking them in a cake pan and cutting them into wedges. Another perfect method would be in a cast iron skillet. However you choose to bake them, they’re fantastic still warm from the oven or after they’ve completely cooled. I actually find the caramel flavor (from the brown sugar and butter) intensifies after a day.

If you’d like to make a larger batch, double the recipe and use a 9×13 pan. You’ll want to increase the baking time slightly, but keep a close eye on them so you don’t over bake them. To make them even easier to remove and cut after baking, simply line the pan with parchment paper, leaving a little flap on the edges.

Ingredients
 
 

  • 2 1/4 cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup butter, melted (2 sticks)
  • 3/4 cups sugar
  • 3/4 cup brown sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 2 cups semi-sweet chocolate chips

Instructions
 

  • Preheat oven to 350 F / 177 C / gas mark 4. Grease 8×8 inch baking pan. (Or line with parchment paper)
  • Combine flour, baking soda, and salt in a small bowl. Combine melted butter and sugars in a large bowl. Add eggs and vanilla and whisk until combined. Pour the flour mixture into the butter/sugar mixture and stir just until combined. Stir in chocolate chips.
  • Spread dough into prepared baking pan. Make sure to spread into edges of pan.
  • Bake at 350 for about 30-35 minutes, or until edges are set and toothpick inserted into center comes out clean. Let cool for about 20 minutes before cutting.
